Many women hate getting hit on so I'd say, don't do it at all and you won't have to worry about getting rejected. Most women don't go to a bar or (especially) a coffee shop to get hit on or to meet men. I'd say smiling at her or saying, ';Hi'; is enough. Maybe the next time, if you see her again, you can start a conversation. In this day and age, it's not wise to expect a woman to talk to a perfect stranger who is flirting with them.
